challenge of ensuring quality standards
are met by a supplier that serves as a consistent
and responsible source to meet
diners' expectations.
Certified Piedmontese (CP) invested in a dedicated
ground beef facility in Lincoln, Neb., as
part of its meat processing plant that opened
in 2020. Initially it was designed to produce
40,000 1-lb bricks per day for the retail segment
if needed.
" But the bulk of our ground beef sales were
for patties and to foodservice, said Ben Mohl,

" That way we could sell coarse grind and then
a retailer could further grind it again with their
own bench trim from their table cuts to produce
their own in-house grind. "

CP has an advantage in the foodservice sector
because it has partnered with Performance
Food Group (PFG), a broadline distributor with
nationwide reach that can serve metropolitan
areas across the country in a timely fashion,
offering customers a single-source, premium
ground beef supply with the distinction of being
grass finished.
" The fact that we can provide it from one
beef program, it's certainly very appealing and I
think even from PFG's standpoint, to know that
they have a consistent supply, a good supply
knowing what's going in there really puts us in a
good position to be able to execute with them, "
he said.
