innate state, in whole and without breaking them
up, the better the burger we're going to make -
whether that be beef, pork, turkey, you name it, "
Sampson said.
When grinding fresh beef, the temperature
of raw materials should be as close as possible
without exceeding the freezing point of beef, and
the mixture should be chilled simultaneously
with blending, Sampson said. He encouraged
processors to avoid over blending the mixture
and recommended a blend of less than three minutes
to achieve the ideal homogenous mixture.
" Some people would wonder about how fast
to feed a grinder, " Sampson said. " Well, you
should feed a grinder as fast as it grinds. If you're
grinding at 800 lbs per minute, you should feed it
800 lbs per minute. "
Maintaining a temperature just above freezing when grinding and blending
ground beef is one component in ensuring the highest quality end product.
