Portioning systems focus on food safety first
while ensuring accuracy and limiting giveaway

ccuracy, consistency and durability are
critical attributes in ground beef portioning
technology. Portioning relates
to any ground meat sold as family
packs or other non-patty formats for
retail or in bulk for foodservice applications.
There is no doubt that end
users whether they are foodservice operators or
retail customers preparing a ground meat dish at
home have varying preferences when it comes to
the size and type of portions.
" 'catch weight' was a standard process. Each tray
or container was weighed and priced by what
was in the container. Now they are sold as exact
weight with one SKU, making it easier on the
retail side of the business. " But he agreed that
cost savings is one of the driving factors.
Jonathan Lacy, regional product specialist for
Marel, in Lenexa, Kan., viewed portion control as
optimizing shape, texture and weight accuracy
for individual portions being processed at high
volumes. Consistency is key, he explained.
Portioning systems are most valuable when
they ensure maximum yield to processors as
margins on ground beef and other ground products
are razor thin.
" The big emphasis is that there must be little
or no giveaway, " said Patrick McGady, vice president
of sales and marketing for Handtmann Inc.,
Lake Forest, Ill. " In other words, a high accuracy
of weight. When it comes to our processing
equipment, we can handle a product like ground
beef, or pork or poultry delicately, with an accuracy
of weight we are portioning. "
" Portion control is a way to mitigate the loss
of money or product due to weight fluctuation, "
said Stefan Neumann, meat specialist with
Reiser, based in Canton, Mass. " It is also a way
to ensure accurate package weights, " he said.
" Every company is in the market to make a profit,
and therefore they have to be able to control
their weights in a package to reduce giveaway. "

" It is a basic part of meat processing because
it is the foundation for the end product. Starting
with a consistent, accurate portion is key to
achieving the optimal finished product. It provides
the starting point for consistency in the
process, " he explained.
Weight accuracy is
a crucial component
of any ground meat
portioning system.
Lacy went on to illustrate some examples of
ground beef portioning. They include hamburger
patties but also encompass meatballs, ribshaped
products, and others that can all be portioned
to specification. Length, width and height
dimensions and a target weight are the general
starting points.
" Texture and shape are also keys to success.
For example, the texture of a hamburger patty
could be standard, tender fresh, butcher or
homestyle, " he explained.
