Beef Market Basket Survey in the early 1990s,
ground beef marketed as these three categories
was obtained from around the country and analyzed
for fat content. We found that regular had
23.8% fat, lean had 19.2% fat, and extra lean had
15.4% fat. The inability to properly gauge the leanfat
ratios of the trimmings likely resulted in regular
ground beef being leaner than intended; the lean
being about right; and the extra lean having more
fat than it should have. Ultimately, the descriptor
of " lean " was changed so products marketed
using this term had to have less than 10 grams of
total fat, 4.5 grams of saturated fat, and less than
95 mg cholesterol.
MONITORING AND MEASURING
Retailers moved to marketing ground beef by
subprimal origin (ground chuck, ground sirloin,
ground round, ground brisket), by lean-fat ratio
(73% lean/27% fat; 80% lean/20% fat; 90% lean/10%
fat, etc.) or combinations of these. Today's retail
meat cases are filled with more varieties of
ground beef than ever before, including branded
programs, organic, grass fed, and hormone free.
From a foodservice perspective, restaurants
have focused on the ideal lean-fat ratio for the
cooked foods they sell. When low-fat hamburger
options began to be offered during the healthand-wellness
era, consumer demand was so low
that these products were dropped. As with most
food choices, if taste is not there, consumers will
often not buy products - even when there are
potential health benefits. Consumers typically
eat foods they enjoy, which once again contributes
to the consumption of ground beef.
Ground beef production
might have started as
an afterthought of what
to do with leftover beef
trimmings, but now it's
big business throughout
the food chain.
When ground beef manufacturers are making a
variety of lean-fat ratio products for retail stores
or supplying patties for foodservice, they must produce
products that comply with their customers'
specifications. Achieving the appropriate leanfat
ratio of the finished ground beef can be quite
challenging, especially when trying to differentiate
between such close ratios, such as 96:4, 93:7, 90:10,
85:15, and 80:20. Properly sorting beef trimmings
to produce such close lean:fat ratios is important,
and failure to meet the specifications can result in
battles between trimming suppliers and grinders.
There are two issues that come into play when
determining the lean point of beef trimmings: 1)
how valid is the sample; and 2) how valid is the
test. As with any testing protocol, if the sample is
not an appropriate representation, then the test
will not be either.
With beef trimmings packed in 2,000-lb combos
for shipping to further processors, these large
containers can be difficult to sample for fat analysis.
In the early days, the technologies used to
determine lean point were less accurate resulting
in a spread around what was ordered and
what was received. Over time, technologies have
improved, and this variation has been reduced.
Today, processors rely on in-line X-ray technologies
being to not only analyze lean point,
but also to search for foreign materials or other
quality defects. With so many lean-fat ratio products
being manufactured today, the need for a
wider variety of lean-point beef trimmings has
arisen. The Livestock, Poultry, and Grain Market
News division of USDA's Agricultural Marketing
Service reports the number of trades, total
pounds, price ranges and weighted averages for
fresh and frozen beef trimmings for 50%, 65%,
73%, 75%, 81%, 85%, 90% and 92-94% lean points.
More sophisticated lean-point sorting systems
are being employed by packer processors
and grinders are using more complicated computerized
least-cost analysis systems designed
to accurately produce the exact lean-fat ratios
needed for their customers. With raw material
costs so tied to the lean point and the need to
provide the lean-fat ratio specifications on the
label, never have the stakes been so high for
making the final products exactly what they
should be. The process of relying on visual sorting
of leftover beef trimmings have given way to
a technology-driven enterprise designed to produce
ground beef products in a more exacting
manner than ever before.
