parts of the slicer as it's where
the metal hits the meat.
" I equate it to tires on a
car - you can have the best
sports car with a big engine and finely tuned
suspension, but if the tires are not very good, the
car will never reach its full potential, " he said.
" Same thing with a slicer. You will never be able
to maximize slicer performance and portion
presentation with a poorly maintained blade. "
PRESERVING BLADES
For slicers, it is important to follow OEMs'
recommendations on proper cleaning, handling
and care for blades.
" Obviously, avoiding sending any foreign
material to the blade, such as casing clips, will
help prevent damaging the blade and reducing
its life, " Sangha said. " The blade carrier should
be on the blade whenever it is handled or on
the cleaning cart to protect the blade edge
and for personnel safety. The blade should be
stored on the slicer parts cart during cleaning.
After cleaning, dry the blade and apply a
white oil. "
Provisur has two recent additions to
its slicing product line that address blade
longevity and care.
" The first is our new MaxLife slicing
blade, which is made of stainless-steel
material with a hardened edge and has
proven to last significantly longer than a
traditional blade before requiring honing
and more than 1.5 times longer before
requiring regrinding, " Sangha said. " We also
offer a new automated honing system with
servo control and precision to simplify the
honing process. The result is a sharper, more
consistent blade than is possible with a
manual honing system. "
