New bacon products offer a wide array
of options at retail and foodservice

Kayem Foods; Hormel Foods Corp.; Einstein Bros. Bagels; Yum! Brands
Kayem Foods recently announced that it
would launch its first ever bacon product.
The company, which is known for
premium beef and pork cuts, will start
to sell Kayem's Maplewood and Double
Smoked Bacon in certain New England
stores.
" My family has been crafting the best
tasting meats for over 100 years and our
new bacon is exactly what you'd expect
from Kayem. It's pure awesome, " said
Matt Monkiewicz, chief executive officer of Kayem Foods. " New Englanders
will finally be able to put bacon on their
burgers or pair it with their eggs and
taste what their ancestors had as real
bacon. "
Both bacon products are made with
hand-trimmed pork bellies and smoked
for 10 hours with proprietary blends of
natural hardwoods. The Maplewood
bacon is available with real maple syrup
exclusively from Butternut Mountain
Farm in Vermont.
The meat processor will also make
butcher cuts available witch are 33%
thicker.
Kayem Foods produces many varieties of hot dogs, deli meats, sausages
and dinner hams. It's most famous for
its Old Tyme Natural Casing franks,
best known as " Fenway Franks. "
Buffalo Gal's Wild Boar Bacon contains
less fat and produces far less grease than
bacon from other types of swine, especially commodity type bellies. Mike Fogel,
owner and operator of the company, said
the product works well beyond bacon
served in traditional ways and suggests
it for soups and mixed into hamburger
patties.
Fogel owns and operates Buffalo
Gal Inc. from the grounds of the Money
Creek Buffalo Ranch in Houston, Minn.,
and raises Eurasian wild boar originally
from the Black Forest, also known as
the Russian boar.
Buffalo Gal slaughters 20 to 30 boar
a month, but it's not always enough to
keep up with the demand for the $17.95
per pound bacon. When necessary,
Buffalo Gal will outsource Eurasian
wild boar bellies from a producer in
Canada.
" We've got some people we've
known over the years that raise the
same Eurasians and we've just kept getting the bellies from them because it's
been a constant battle to try and keep
enough supply, " Fogel said.
Raising the Eurasian wild boar
pays off with a bacon voted Best " wild "
Bacon by Fox News in 2017 and
one of the " Best Bacons Known
to Man " in 2020 by men's lifestyle website " The Manual, " but
it didn't start with bacon. Fogel
began raising the Eurasian
wild boars over 40 years ago.
Originally, he sold them to
game preserves for hunts.
HORMEL BRINGS RANCH TO BACON
Hormel Foods Corp. is introducing
Hormel Black Label Ranch Thick Cut
Bacon. This newly launched bacon variety is hardwood smoked and rubbed with
ranch seasoning. Each two-slice serving
contains 110 calories, 7 grams of protein
and 9 grams of fat.
" Our team combined America's
favorite condiment with thick-cut
bacon to create Hormel Black Label
bacon hand-rubbed with ranch seasoning, " said John Hernandez, brand manager for Hormel Foods. " This new item
will deliver the mouth-watering flavor
of bacon and creamy ranch you crave
on any sandwich, salad or baked potato
- creating an unforgettable meal. "
In addition to the ranch variety,
Hormel is also launching Black Label
Classic Country Style Thick Cut Bacon.
Smoked for more than 10 hours, the
product features " the unforgettable flavor of bacon made with time-honored
smokehouse processes dating back to
the days of the American settlers, " the
company said. Each two-slice serving
contains 130 calories, 7 grams of protein and 11 grams of fat.
Hormel's new Black Label bacon
varieties are available in 12-oz packages
at Walmart and Spartan Nash locations.
