COEXTRUSION SOLUTIONS offers
sausage makers the Stargate Sausage
Production System. The Stargate system
provides processors a turn-key, continuous
line with a superior methodology that's
controlled, compact, efficient, flexible, and
affordable. The Stargate utilizes a casing
gel rather than the typical sticks of casing.
Using coextrusion, the system pumps the
casing gel and meat, or plant-blend, matrix
through the extruder simultaneously. This
automated stuffing process saves both
time and money.
The system dewaters the gel casing
by passing the coextruded rope under
a saturated table salt brine. The brine
strengthens the casing gel making it
possible to cut the rope into precise
lengths, weights, and diameters. Once
ready, the links will pass through the heart
of the Stargate System, the two patented
Thermal Wheel Ovens. Each oven has

eight process cells to provide control over
air temperature, speed, and humidity,
similar to a smokehouse process.

PATENTED THERMAL
WHEEL OVENS

Partially cooked sausages exit the second
Thermal Oven to package processing
where the system vacuum packs and
transports them to the hot water cooking
bath. The bath heats the packaged
product to lethality temperature to
destroy bacteria. Once finished in the
hot bath, fully cooked sausages move
to the chilled water bath to instantly
begin chilling the sausages to an internal
temperature of 4°C. Packers can then
prepare cases of product and palletize for
shipment.

Coextrusion Solutions' patented Thermal
Wheel Ovens use a high velocity, heated
air thermal process to significantly reduce
the drying time of the gel casings on
coextruded products. The patented
system directs airflow at products with
precision and disrupts the microclimate
surrounding the sausage. The disruption
evaporates moisture from the surface
of the sausage. Using the eight cells
per wheel, the processor can dial-in the
perfect climate, ensuring the perfect
product. Making a "tender" or the
traditional "knack" casing bite is simplified
with the Stargate Thermal Wheel Oven.

PREP, PACKAGE,
COOK, CHILL
The first Thermal Wheel Oven begins
the development of the final casing.
When the product exits the first Thermal
Wheel, the casing is prepared to receive
CleanSmoke, a Red Arrow product, that
evenly and consistently smokes the
product to deliver a craveable flavor.
Operators can change over smoke flavors
quickly and easily.
