at the meat case have shifted, the brick package of case-ready ground beef has also mixed
up the meat case and spurred changes at the
processing level. "We are seeing a huge demand
for fully vacuumed brick products. Years ago,
that presentation wasn't as consumer friendly,
but now, people are starting to get used to that
and you're seeing more in grocery stores," says
Paul Kean, vice president for Risco USA, South
Easton, Massachusetts.
Accordingly, Risco has come up with solutions for such package formats. "We developed
and released earlier this year a system we call
our Ground Beef Flex line. We do ground beef
noodles into the tray, ground bricks into the thermoforming machine and patties on the same
unit, to give customers flexibility," Kean explains.
"Most lines in case-ready plants are dedicated
lines, and so this allows them to cover three
different types of product on one machine." In
