When developing the versatile new machine,
Risco was intent on ensuring processors' dual
needs for versatility and efficiency. "It keeps pace
with high volume and it is user friendly, reduces
rework and produces a higher throughput with
a lower giveaway. This machine is flexible for
some of the smaller processors," Kean notes.
Other improvements and changes in ground
beef processing systems and technologies have
revolved around operational issues. "With the
move from high volumes of ground beef to small
batches, we have been charged with supplying
production lines that allow the processors quick
and easy cleaning of the equipment during lot
changes," Kerr says.
In addition to changeover and sanitation, training is also increasingly important to
processors and something addressed by suppliers. Reiser and Provisur, along with many other
suppliers, offer training programs and services,
as well as state-of-the-art testing or innovation
centers onsite at their headquarters.
