A MATTER OF SCIENCE+FOOD

S

ince 1939, IFT has been bringing together food
and technology professionals to collaborate and
learn from each other. Scheduled for July 15-18
at McCormick Place in Chicago, IFT18 - the Institute of
Food Technologists (IFT) annual meeting and Food Expo
- promises to be the world's premier event for all things
concerning food technology.
IFT expects 23,000 attendees to come from around the
globe for the meeting's 100 scientific sessions consisting
of 700 technical research presentations, posters and
ePosters and to visit with 1,200 Food Expo exhibitors.
With the theme, "A Matter of Science+Food," this
year's IFT promises its attendees countless opportunities
to learn, connect and innovate during the three-day
show. Once again, show organizers have put together a
program called IFTNEXT which features short courses,
debates, roundtables and critical panel discussions
designed to challenge and engage attendees. Topics
such as "Storytelling: Innovations from the Far Corners
of the Developing World" and "Competitive Technical
Intelligence - Knowing the Outside World" will explore
the industry of tomorrow and the challenges facing
them around the world today. The IFTNEXT Quickfire
Discussions: "Global Solutions for Food Security"
and "From Data to Drones: Innovative Food Safety
Applications" will give the audience the chance to hear
multiple perspectives with the chance for interaction at
the end of the presentation (additional IFTNEXT sessions
can be found in the IFT schedule on Page 6.)
Several pre-event short courses are also planned for
July 14-15. Topics include low-moisture foods, clean label
product development, flavor interactions in food, labeling
requirements and product development for the consumer.

An awards celebration on July 15 at 6 p.m. will open
the annual meeting. IFT members will be honored for

their achievements, and the 2018 class of IFT fellows will
be announced.
The IFT Food Expo will run three days, July 16, 17
and 18. Each day the show opens at 10 a.m., closing the
first two days at 5 p.m. and the third day at 4 p.m.
New this year, the IFT Food Expo will expand into
both the North and South Halls of McCormick Place. In
addition to more than 1,200 exhibitors, the Food Expo
will feature Specialty Pavilions including:
* IFTNEXT Start-Up Alley where you can meet oneon-one with leading-edge entrepreneurs;
* Organics Pavilion, which will showcase the latest
products and trends in organic and natural products;
* China Pavilion, which features a collection of new
products, ingredients and vendors from China in one
location; and
* Food Safety and Quality Assurance Pavilion will
host technologies, processes and services that focus on
food safety and quality assurance
Registration is now open at www.iftevent.org.
Attendees can sign up for Total Access, One Day or Expo
Only passes. IFT also recommends booking hotels early.
The online registration form provides a link to the official
hotel service.

awards and details about exhibitors, including a current
floor map. It also provides a guide to the city of Chicago
and tips about attire and weather.
