they normally account for only around
20 percent of testing conducted in the
food industry, according to Foss.
"We are seeing this trend because
the available pathogen test solutions are
often slow and/or expensive compared
to screening tests, for example, for E
Coli and coliforms," says Nicoline Baek,
product manager, microbiology.
Foss is concentrating on screening by
providing rapid, simple tests to identify
if there is a potential problem. This has
two main benefits for food producers,
she says. First, they can do a positive release of products more quickly and with
confidence when everything is OK, and
secondly, they only need to do pathogen
testing when necessary - if the screening reveals a potential problem.
Foss sees an increasing interest in
routine screening from the food industry. "Tests with our rapid microbial
screening solution called MicroFoss are
not exactly real-time [6-12 hours] but a
vast improvement on the days it takes
with conventional tests," Baek says.
Tests for use with the MicroFoss system are under continuous development.
"Apart from the pre-mentioned E Coli
and coliform tests, which have been
available for several years, we have recently released new tests for lactic acid
bacteria and UHT applications," Baek
says. "The actual testing procedure has
also been simplified with more dedicated
products, e.g., an Enterobacteriaceae test
for acidic products with reduced sample

preparation involved for the user."
PCR technology based on DNA amplification allows for detection of target
pathogens before the bacteria actually
grow on an agar plate, Bio-Rad's Crutchfield says. Due to the sensitivity of PCR
methods, time to get detection results of
these harmful organisms is decreased by
days over conventional culture methods.
The high specificity of PCR provides accurate results regardless of growth of competitor organisms. Real-time PCR provides
simultaneous amplification and detection
of pathogens. Real-time PCR methods still
require enrichment, but the enrichment is
normally decreased by a minimum of 24
hours over conventional methods.
Bio-Rad Laboratories manufactures
iQ-Check real-time PCR kits for detection of E. coli O157:H7, Salmonella, Listeria monocytogenes and Listeria spp.
These kits utilize specific molecular
beacon technology to detect highly conserved regions of the genome of target
pathogens, Crutchfield says. "Because of
this sensitivity and specificity, accurate
results are available in about eight hours
for E. coli O157:H7, 16 hours for Salmonella and 24 hours for the two Listeria
assays. Platforms are available for highvolume users with a 96-well instrument
and for low-volume users with a 48-well
instrument. All kits are approved by the
AOAC Research Institute."
France-based bioMérieux recently introduced VIDAS UP for E. coli
O157:H7 detection. This solution is
