Fast and furious
Rapid tests are becoming faster and more
specific in industry's quest to improve food safety

uring the past decade, the U.S.
meat and poultry industry has
made much progress in reducing E.coli O157:H7, Salmonella and Listeria monocytogenes in the meat and
poultry supply - despite the mysterious spike in E. coli O157:H7 recalls this
past year. The best indicators of this
progress are the results from the Food
Safety and Inspection Service's routine
testing for these pathogens in various
meat categories, says Randy Huffman,
president of the American Meat Institute Foundation, Washington.
"With some very minor exceptions,
you'll see an overall downward trend
over the last 10 years in all three of
those pathogens in the major product
categories," he says. "There is fluctuation from year to year and leveling off

when you get down to really low levels, which we're seeing now - especially if you look at Listeria in readyto-eat products."
