"In 2002, I said, 'Case-ready is the future,' but not in the manner it is in with
its current form," recalls Albert Girgenti,
AVA's CEO. "We needed to be where the
future needs of the operator were headed.
But we needed to go there with a specialized offering. At the time, most caseready products were MAP-pack, which
I didn't like because it didn't resemble a
product packaged at the store level. So,
we looked at the latest technology and
got involved in over-wrapped pork and
beef, using only the freshest meats, both
domestically and imported from Canada,
to really build the quality, variety and
shelf-life," Girgenti says.
The over-wrapping technique was
so successful
that the company quickly
outgrew the
old building. A
decision was
made to move
out of the city
and build a new facility to allow the
company to broaden its product lines
with the addition of expanded caseready beef and aged-beef for service

expansion when
the time came.
"We wanted to
be ready to grow because we saw pork
demand continue to rival chicken," Girgenti says. "I knew pork would be the
next protein to be pre-wrapped and
brought to market as consistently as
chicken. With meat cutters aging and
shelves often sitting empty, case-ready
solutions, led by pork, was a logical solution for consumer meal planning.
