"Italians are very passionate about
their food," explains Lorenza Pasetti,
third-generation salumiere and president of Volpi Foods. "Through word of

mouth, this is how our business grew
for many years."
Unlike their American counterparts,
Volpi uses a centuries-old form of drycured meat processing to make its Italian meat products. The process consists
of dehydrating the meat and utilizing
air, humidity and time. The curing,
drying and aging process includes
hand salting and massaging, followed
by drying. It takes a minimum of 10
months to prepare a ham (12 months
for prosciutto), 30-90 days for salami
and somewhere in between for specialty meats such as dry pork bellies, pork
shoulders and minced meat.
Most of the products are salted for
a period of time and then dried. "You
can hurry this process by adding a lot
of salt and heat, but when you come
across a product that isn't very salty and
not heat treated, you can taste the difference," says Pasetti. "Light on the salt

and mild on the temperatures; there's
no hurrying our process."
Pasetti notes Volpi Foods is a true
specialty processor and does not maintain a custom processing business.
