A lab's plan for receiving and processing samples directly affects timeliness and in some cases the cost of
analysis. "Your lab should be available
when you need services and accessible by couriers for overnight deliveries," she says. "Samples should be processed upon receipt, even after hours,
during weekends, or on holidays. The
only limit on the time to results should
be the limitations of the analytical assay, such as incubation time."
Added services, such as consulting,
auditing, education, research, and technical supports, allow processors to consider results in the bigger picture of food
safety and quality, Warren-Serna says.
"Ideally, your lab should provide these
value-added services," she adds.
Networking should be an extension
of lab services. "Through your lab, you
should have open access to a network
of resources and contacts that can support your organization as needs arise
or to simply keep you informed," she
says. Warren-Serna also urges processors to require their lab partner to maintain a strong management presence,
ensuring the principles of the quality
system are maintained, particularly as
they relate to employee training and
competence, verification of results, and
customer service.
Perhaps the biggest advantage to
outsourcing involves taking the responsibility of running routine testing
out of the hands of the plant operations and quality assurance staff and
allowing them to focus on processing
high-quality and safe meat and poultry
products, Westmoreland says.
"Food companies want to have the
ability to focus on doing what they
are experts at - producing food," he
adds. "They want to leave the lab work
up to the lab experts, which in many
cases involves using an independent
source."
