Graves points out that the proposal
separates grass-fed from "free range,"
and Panorama, which fi nishes its "natural"-labeled beef for 30 to 60 days on

But many in the grass-fed community are furious about the proposal's

chief of the standardization branch in
U.S.D.A.'s livestock and feed program,
described the proposal in a speech at
this past July's meeting of the American Grassfed Association in Colorado
Springs, Colo., many in the audience
howled with disapproval. Their complaint is exactly the distinction that
Graves noted: The proposed standard
describes only allowable feeds and
says nothing about requiring certified
grass-fed cattle to be grazed on pasture.
The National Cattlemen's Beef Association also thinks the proposal falls
short. "We know when most consumers
think of grass-fed they think of cattle
grazing on a pasture, not in a feedlot,"
Michele Peterson Murray, an N.C.B.A.
spokeswoman, told the New York Times
recently. "We do believe the defi nition
should not mislead consumers."

Defining discrepancies
Mel Coleman Jr., chairman of Coleman Natural Foods, Golden, Colo.,
has battled the government for many
years over defi nitions, fi rst with the
word "natural"
and then "organic." The debates
run in the family. Mel Coleman Sr. was one
of the advocates
for what eventually became the
Coleman Jr.
Federal Organic
Standards Act, which described and
standardized "organic" for meat and
other foods. But Mel Jr. thinks the
challenges ahead for the grass-fed industry are far greater than anything
put forth at this point by U.S.D.A.
