bacon back on the plate

rett Elliott, president of Shelby
County Cookers, is bringing
home the bacon, but not just
any bacon. His is value-added and fully
cooked bacon that Elliott says its customers sell to consumers as a palatable
center-of-the-plate meat item.
Shelby County Cookers is a "processing concept that allows its customers to
profit from growing consumer demand
for pork and other value-added meat products that are healthy, convenient and delicious," according to Elliott, who formed
the company with Bernie Hansen, president of Alma, Kan.-based Flint Hills
Foods, and Scott Carlson, president and
C.E.O. of Omaha, Neb.-based Westin
Foods. Shelby County Cookers targets
foodservice distributors, retailers, national accounts, manufacturers and branded
marketers by producing bacon products
"from A to Z," Elliott says.

The company offers fully cooked,
slab and sliced bacon; bacon toppings
and bits; and other cooked meat products. The players who created the company share a similar belief that listening is the most valuable tool in their
business plan. They all focus on listening to customers' requests and providing the innovation to produce products
their customers' desire faster and better
than anyone else.
Shelby County Cookers has three
plants, including Flint Hills Foods'
operation in Denison, Iowa, and Westin Foods' facility in Fairbury, Neb. In
2004, the company built a new state-ofthe-art plant in Harlan, Iowa, specifically designed to manufacture cooked
bacon. The plant, which opened last
year, is currently running three lines
and has the capacity to expand to six,
Elliott says.

Testing an oven
The Harlan plant is equipped with
microwave technology to cook bacon,
but that's not all. "It also features a prototype, full-size commercial oven that's
the only one of its kind in the country,"
Elliott says.
Shelby County Cookers is partnering with Ferrite, a Nashua, N.H.-based
company that designs and manufactures
microwave heating systems and components, to test the oven in the plant. Elliott says the oven is being used to produce a more home style-cooked bacon
product - but one that is as cost-efficient as a microwave-cooked product -
to use as a center-of-the-plate item.
